Made a romantic chicken/broccoli/cheddar casserole for Valentine’s Day dinner - instead of heavy cream, we used fat free Greek yogurt in the sauce, and topped it with some of those French fried Durkee onions. Cheated a little with a rotisserie chicken, but we roasted the broccoli ahead of time today.

“Veggie Italian” - Fresh basil, fresh red onion, black olives, & Sun-Dried tomatoes, with a sun-dried tomato/pesto “sauce” - some crushed red peppers on top, on a flatbread Lavash ‘crust’…..

I saw this jar of soup at the store and thought, F#CK! I could make that - and healthier & better! The ‘chowder’ broth is chicken broth, mashed cauliflower, Greek yogurt, lite coconut milk, and 2% milk. Roasted all the veggies first, and added bacon to it for some smokiness…..

Teriyaki chicken bowls - Got a ‘deal’ on like 3lb. of boneless, skinless chicken thighs - luckily we were slicing them up anyways. Never grilled bok choi, saw someone doing it online, tried it with a sambal/olive oil marinade - F#CKIN’ delicious! Made a baked curry brown rice as the ‘base’…..

I think I’ve told this story here before. Only ever been to ‘jail’ once, overnight - for a DUI (SHOCKING!!!!!) when I was a lot younger and stupider. It was me, 12 Mexicans, and one Asian dude in a powder blue tuxedo snoring on the floor. My one call the next morning was to my buddy who was drinking with me (and probably just as drunk) made him drive about 20 miles to pick my @$$ up - and we went to Denny’s for ‘breakfast’…..

Tomorrow - Easter ‘Saturday’ with my mom, sister, brother-in-law, and whoever else shows up. My brother-in-law is doing smoked salmon on the Traegger (I’ll try to get some pics) - I’m bringing a ‘side’, I call it “Tropical Baked Brown Rice’…..

Posted before, my mom was born in Michigan, lifelong fan, and we’re all in Arizona - should be a great game…..

Crazy! Pulled it out of the oven, all the vegetables floated to the top! Wasn’t expecting that! Fluffed it, hit it in the oven for another 15.
