they are so overrated
Nah, not really IMO. If we look at the talent all around, Dallas has the better players (yes I know, team sports) but they did have the better special teams and could argue that the better offense and a great defensive unit (credit to Dan Quinn who changed his approach).

The big but, and not the type I like, is the coaching. Mike McArthy is a doofus who'll make stupid calls in the game, but not only that. His teams don't practice hard and that shows on the weekend. His teams have always had that problem. If Jerry brings him back it will happen all over again.

Who did they beat this season?
Half of their wins came within the NFC East, the worst Divison in the NFL.
Now let's go over their other 6 wins, Chargers ( 9-8 ) Panthers ( 5-12 )Pats ( 10-7 )
Vikings ( 8-9 ) Falcons ( 7-10 ) and Saints ( 9-8 )

The truth is that the Cowboys are good enough to beat up on a weak NFC East, and win a few against average or just above average teams.

and Yes, it doesn't help that Mike McCarthy is the head coach

That's exactly it, agree with you. Thats the thing. They're not a team yet. This squad has no identity. You can have the better talent and even the advantage in the different units but you have to know how to mesh that together.

Look at their last couple of games in the regular season. Are they a high powered offense? A running down the middle team? That plus soft practices doesn't do them any good.

I don't think they're overrated, I think they're underachievers. Their is a slight difference, IMO.
