3-5 so good.

You go past 5 and you’re cooking off flavor due to moisture loss and fat loss. That makes the steak tougher and chewier too.

Of course I’m talking about the higher quality steaks like ribeye, strip or filet. Not welfare steaks like flank, skirt, hanger. Those could go to medium or medium-well and taste good.
